Melon with Raspberry-Citrus Fruit Dressing

Serves Serves 4; 1 cup fruit and 2 Tbsp. dressing per serving

Ingredients

1/2 cup frozen red raspberries, thawed
2 Tbsp. lemon juice
1 Tbsp. canola oil
1 Tbsp. sugar
1 tsp. chia seeds
1 to 2 tsp. grated orange zest
4 cups honey dew or cantaloupe melon cubes or 4 wedges

Instructions

Combine all, but the melon, in a small bowl. (Note: For a thinner, crunchier dressing, serve immediately/for a thicker, slightly crunchy texture, refrigerate overnight. (The chia seeds will become gelatinous if allowed to sit overnight.)
